Yummy Granola & Yogurt Breakfast Cups Recipe
Prep Time: 10 min | Cook Time: 20 min | Yields: 8 granola cups
Granola Crust
+ 1 cup crispy crumbs or your favorite breakfast cereal
+ 2 tbsp water
+ 1 tbsp peanut butter
Yogurt Filling
+ 1/2 cup Greek yogurt
+ 2 tsp honey
Toppings
+ fresh fruit
+ toasted seeds
+ toasted nuts
+ bee pollen
+ toasted coconut chips
+ cacao nibs
+ goji berries
To make the crust: Preheat oven to 350ºF / 180ºC. Process the crispy crumbs or your favorite breakfast cereal into flour. Add water, peanut butter and mix well. Scoop the mixture evenly into each lined muffin cup, press flat and bake in the oven for 20 minutes. Let cool.
To make the filling: Blend the yogurt with the honey until smooth.
Fill each granola cup with the yogurt filling and add your favorite toppings. Enjoy!
