Raw Vegan Cashew Mayonnaise Recipe

Ingredients
+ 1/2 cup (75 g) raw and unsalted cashew nuts
+ 1/3 cup (75 ml) water
+ 1 tsp dijon mustard
+ 1 tbsp lemon juice
+ 1 garlic clove
+ pinch of sea salt
+ 1/3 cup (75 ml) water

Directions
Place cashews in a small bowl, cover with warm water and let soak for 3 to 4 hours. Discard the water, rinse the nuts and place all the ingredients in a blender or food processor and blend until creamy and smooth. You can add more or less water depending on your desired consistency. Serve immediately or store in a glass jar in the fridge for up to 3 days. Enjoy!
