L. Reuteri Yogurt Recipe
Prep Time: 5 min + incubation time | Cook Time: 0 min | Yields: 4 cups
+ 2 tbsp inulin
+ 4 cups (1 liter) of half-and-half, or use whole milk (for a thicker texture, half-and-half works best)
Crush the L. reuteri tablets and mix them with the inulin in a bowl. Add a small amount of milk to the mixture and whisk thoroughly to dissolve the powder. Then, combine this mixture with the remaining milk and stir well. Pour the entire mixture into an Instant Pot or yogurt machine. Set the Instant Pot or yogurt machine to the yogurt setting and maintain a temperature of around 100°F (37°C) for 36 hours. Once ready, place it in the fridge, where it can last for up to 10 days. Enjoy!
Note 1: If you start the process at 8-9 PM, it will be ready by 8-9 AM two days later. If you start at 8-9 AM, it will be ready by 8-9 PM the next day.
Note 2: For future batches, you only need 2 tablespoons of yogurt from your previous batch, 4 cups of milk, and 2 tablespoons of inulin. There’s no need to add more L. reuteri tablets. Just mix these ingredients together, and you’re all set!
