Making tortillas, fresh pasta or bread at home seems like overkill, but if you’re struggling with bloating and abdominal discomfort, making everything from scratch may actually be a necessity. It’s very important to pinpoint which ingredients are causing those symptoms, and you can only do that if you know exactly what goes into the foods you eat. Plus, homemade food is fresh, full of nutrients, delicious, healthy, and if you make a big batch, you can freeze the leftovers and have plenty of healthy options that can be reheated in minutes.
These easy 6-ingredient spelt tortillas are perfect for taco nights, you can make nachos, quesadillas or burritos with them and, since spelt is a non-GMO wheat variety, they’re also great to test if you’re intolerant to gluten or if you’re just sensitive to genetically modified wheat (the kind of wheat that’s commonly used in processed foods).

Easy 6-Ingredient Spelt Tortillas Recipe
Prep Time: 20 min | Cook Time: 10 min | Yields: 8 tortillas
+ 1 cup whole spelt flour
+ 1 cup unbleached white spelt flour
+ 1 tsp sea salt
+ 1/2 tsp baking powder
+ 2 tbsp olive oil
+ 1/3 cup warm water
In a medium bowl, whisk together the flours, sea salt, and baking powder. Add the olive oil, mix well with your hands, then add the water and keep mixing until the dough comes together. Knead the dough for about 2 minutes, shape it into a ball and place in the bowl. Cover with a tea towel and let rest in the countertop for at least 10 minutes.
Heat a large non-stick pan over medium-high heat. Cut the dough into 8 equal chunks and roll them into small balls. On a floured surface, roll out the balls of dough as thin as possible. Place one tortilla onto the pre-heated pan and cook until you begin to see bubbles, about 30 seconds. Flip the tortilla and cook the other side for about 10 more seconds. Set the cooked tortilla on a plate, and cover with a tea towel. Repeat the process for the remaining tortillas.
Once all the tortillas are cooked you can make these easy fish tacos and enjoy them immediately or you can store the tortillas in an airtight plastic bag in the fridge or freezer. Enjoy!
