Sweet potato fries
+ 1 medium sweet potato, cut into fries
+ 1 tbsp olive oil
+ 1 tsp garlic powder
+ 1 tsp paprika
+ sea salt and freshly ground black pepper, to taste
Crispy chickpeas
+ 1 can chickpeas, drained and rinsed
+ 1 tbsp olive oil
+ 1/2 tsp garlic powder
+ 1/2 tsp dried oregano
+ 1/4 tsp ground cumin
+ sea salt and freshly ground black pepper, to taste
Harvest platter
+ 2 cups salad greens (such as spinach, arugula, and lettuce)
+ 1/4 cup crumbled feta cheese
+ 1/4 cup thinly sliced red onions
+ 1/2 cucumber, thinly sliced
+ 1/4 cup sprouts (such as alfalfa or broccoli sprouts)
+ 2 tbsp pumpkin seeds
+ 2 tbsp honey mustard vinaigrette
To make the sweet potato fries: Preheat the oven to 425°F (220°C). In a bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread the seasoned sweet potato fries in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
