Crispy Chickpea & Cauliflower Rice Salad Recipe

Vinaigrette
+ 1/4 cup olive oil
+ 2 tbsp apple cider vinegar
+ 1 tsp Dijon mustard
+ 1 garlic clove, minced
+ sea salt and freshly ground black pepper, to taste
Salad
+ 2 cups salad greens, washed and drained
+ 1/2 cauliflower head, grated
+ 1/2 cup spicy baked chickpeas
+ 1/2 red onion, thinly sliced
+ 1 apple, thinly sliced
+ 1 avocado, cut into chunks
+ 1/4 cup fresh parsley, finely chopped
To make the cauliflower rice: Remove the leaves from the cauliflower and break it into florets. Rinse well and process in a food processor or grate using a box grater.
To make the vinaigrette: Whisk apple cider vinegar, mustard, and garlic clove in a small bowl, then slowly whisk in olive oil. Season with salt and pepper and set aside.
Slice the apple, onion; chop the parsley, and cut the avocado into chunks. Place the salad greens in a salad bowl, top with cauliflower rice, chickpeas, onion, apple, avocado, and parsley. Drizzle the dressing on top. Serve and enjoy!
