Berry Bliss Chia Parfait Recipe
Prep Time: 5 min + soaking | Cook Time: 0 min | Serves: 2
Chia pudding
+ 3 tbsp chia seeds
+ 1 cup Greek yogurt
Chia parfait
+ 1/2 cup mixed berries (strawberries, blueberries, raspberries)
+ 1 kiwi, peeled and diced
+ 2 tbsp chopped nuts (almonds, walnuts, pecans, hazelnuts)
+ additional berries and seeds for topping (optional)
To make the chia pudding: In a bowl, mix together chia seeds and yogurt. Stir well to combine and let the mixture sit in the refrigerator for at least 1 hour or overnight, allowing the chia seeds to expand and thicken the pudding.
Once the chia pudding has set, start assembling the layers in two serving glasses or bowls. Begin by layering a spoonful of mixed berries and kiwi slices at the bottom of each glass. Next, add a layer of chopped nuts on top of the berries and kiwi. Carefully spoon a layer of the prepared chia pudding over the nuts, dividing it evenly between the two glasses. Finally, arrange slices of strawberries on top of the chia pudding layer and sprinkle seeds for added crunch and nutrition. Serve and enjoy!
